The King Trumpet mushroom, also called the King Oyster, originates from southern Europe and surrounding areas. In the wild, this mushroom grows on hardwood trees. The mycelium will colonize the roots of the tree and the mushrooms can be found emerging from the ground around the tree base. Many consider the King Trumpet to be the best tasting and the highest quality mushroom in the oyster family. The flavor is slightly nutty and the texture is very dense and meaty. This is true for both the stem and the cap. Slice these mushrooms and sauté in oil and/or butter until golden brown. Add your favorite spices and the mushrooms will soak up the flavors while cooking. This mushroom goes very well with Italian dishes and soups. They also make a great side dish on their own.
